Italian Tofu Kabobs
1 package SoyBoy
Italian tofu
½ cup crimini mushrooms
½ cup cherry tomatoes
1 zucchini or summer squash
1 onion
½ cup bell pepper
1 teaspoon basil
1 teaspoon chopped rosemary
1 teaspoon garlic granules
2 tablespoon olive oil
Salt and black pepper to taste
10 bamboo skewers soaked in water
- Cut the tofu and
vegetables into bite size pieces.
- Combine all
ingredients in a bowl, add salt and black pepper to taste and mix well.
- Carefully put tofu
and vegetables onto soaked wood skewers.

Place on a preheated, clean and oiled
grill cooking 3-5 min on each side.
Serve kabobs alone, in
a pita, with salad greens, or over pasta.
