Italian Tofu Kabobs

1 package SoyBoy Italian tofu
cup crimini mushrooms
cup cherry tomatoes
1 zucchini or summer squash
1 onion
cup bell pepper
1 teaspoon basil
1 teaspoon chopped rosemary
1 teaspoon garlic granules
2 tablespoon olive oil
Salt and black pepper to taste
10 bamboo skewers soaked in water

  1. Cut the tofu and vegetables into bite size pieces.
  2. Combine all ingredients in a bowl, add salt and black pepper to taste and mix well.
  3. Carefully put tofu and vegetables onto soaked wood skewers.
  4. Place on a preheated, clean and oiled grill cooking 3-5 min on each side.

Serve kabobs alone, in a pita, with salad greens, or over pasta.
