Pasta Salad with Italian Tofu


1 package of SoyBoy Italian tofu
1 lbs rotini pasta - cooked and drained
½ cup cherry tomato - halved
¼ cup bell pepper - diced
¼ cup peas
¼ cup black olives - sliced
½ onion - diced
1 celery stalk - diced
2 tablespoon fresh basil - julienne
2 tablespoon fresh parsley - chopped
Salt and black pepper


3 tablespoon olive oil
1/3 cup red wine or balsamic vinegar
2 tablespoon lemon juice
½ tablespoon Dijon mustard
1 tablespoon nutritional yeast
1 tablespoon onion powder
½ tablespoon garlic granules
½ teaspoon basil
¼ teaspoon marjoram
pinch of salt


Cut tofu into ½" slices, cover with olive oil and grill or pan-fry. Cut cooked slices into ½" cubes. In a small bowl whisk dressing ingredients together. In a large bowl combine pasta, tofu, veggies, and dressing. Mix thoroughly and salt and pepper to taste. Garnish with basil and parsley. Cover bowl and refrigerate until ready to be served.
