Tempeh Reuben Sandwich


1 - 8 oz package of SoyBoy Organic Tempeh (Soy or 5-Grain)
cup nutritional yeast flakes
cup whole-wheat pastry flour
teaspoon salt
teaspoon garlic powder
1 cup water
1/3 cup soybean oil
teaspoon horseradish
1 tablespoons prepared mustard
cup sauerkraut (optional)


Mix dry ingredients in a saucepan. Add water slowly, whisking to avoid lumps. Heat gently over a low to medium flame, whisking constantly until thick and creamy. Remove from heat and whisk in oil, horseradish and mustard. To make the sandwich, spread one slice of dark bread with your favorite mayo, then layer with cake of crisply fried tempeh, 3 tablespoons warm sauerkraut, and cup of the sauce prepared above. Top with another slice of dark bread and enjoy!
