Tempeh Reuben Sandwich

Ingredients:

1 - 8 oz package of SoyBoy Organic Tempeh (Soy or 5-Grain)
¾ cup nutritional yeast flakes
¼ cup whole-wheat pastry flour
½ teaspoon salt
½ teaspoon garlic powder
1½ cup water
1/3 cup soybean oil
¼ teaspoon horseradish
1½ tablespoons prepared mustard
¾ cup sauerkraut (optional)

Directions:

Mix dry ingredients in a saucepan. Add water slowly, whisking to avoid lumps. Heat gently over a low to medium flame, whisking constantly until thick and creamy. Remove from heat and whisk in oil, horseradish and mustard. To make the sandwich, spread one slice of dark bread with your favorite mayo, then layer with ¼ cake of crisply fried tempeh, 3 tablespoons warm sauerkraut, and ¼ cup of the sauce prepared above. Top with another slice of dark bread and enjoy!
