Tofu Dinner Salad


1 package SoyBoy® Baked Tofu (Caribbean or Tofu Lin) – sliced into ½” bricks
1 bag baby salad greens
1 Avocado – chopped
1 ¼ cup Cucumber – sliced
1-2 Carrots – grated
1 Tomato – chopped
1 Apple – chopped (optional)


½ cup Olive Oil
3-4 tablespoons Balsamic Vinegar
1-2 teaspoons Mustard Powder
1-2 teaspoons Honey


Pan-fry the tofu in olive oil until barely brown on the edges. Drain on paper towel and let cool. Whisk together dressing ingredients in a small bowl. Mix all of the salad ingredients together in a large bowl and top with the dressing.
