Tofu Scramble


1 lb SoyBoy Organic Firm Tofu - crumbled
2 tablespoons oil
1 carrot - sliced
1 onion - chopped
2 cloves garlic - minced
1/4 cup red cabbage - chopped
1/2 cup broccoli - chopped
1/4 cup nutritional yeast
1 teaspoon sesame oil
2 tablespoons Tamari
Salt and pepper to taste


Heat oil in pan on medium-high and sauté tofu and onion until the onion becomes translucent. Add carrots, broccoli, and garlic. When broccoli becomes tender, add sesame oil, cabbage, tamari, and nutritional yeast. Turn off heat and mix well until cabbage is cooked. Serve with home fries and toast or as a filling in a pita or wrap.
